I will share step on step how to make Katwa Datar Chorchori Recipe, which is very simple to cook and also mouth-watering. It can be prepared in both ways; you can prepare either with other veggies like potato, pumpkin, pointed gourd, or ridge gourd with sun-dried lentil fritters (bori) or you can prepare with fish head or prawns. Here I am preparing with fish head and other veggies.

Ingredients
- Katwa data-250 gm
- Pumpkin-250 gm
- Pointed gourd-2
- Potato-2
- Rohu fish head (fried)-1/4th of a full head
- Bori/sun-dried lentil fritters ( big size)-4
- Bay leaves-3
- Panchphoron-1/2 tbsp
- Cinnamon stick-1/2 inch
- Cardamom-1
- Black Pepper -5
- Ginger paste-1 tbsp
- Turmeric powder-1/2 tbsp
- Cumin-coriander powder-1 tbsp
- Red chili powder-1/2 tbsp
- Mustard oil-1 tbsp
- Sugar-1/2 tbsp
- Salt to taste
How to make Katwa Datar Chorchori Recipe
Clean and wash the data and discard the leaves
Cut the data into 1-inch size
Heat oil in a pan and add panchphoron, bay leaves, and whole spices for tempering
As they splutter and sizzle, add the potatoes and pointed gourd and sauté them for a minute
Now add the data and pumpkin and sauté them for two minutes
Now add the ginger paste and stir them for a minute
Add turmeric powder, salt, and cumin-coriander powder and stir them till the raw smell goes off
Now add the fried fish head
Add red chili powder
Now add sugar and mix them well
Add 2 cups of water and cover the lid, and allow them to cook for 6-7 minutes on low flame
Meanwhile, heat oil in a small pan, and fry the bori
Open the lid and add the fried bori and mix them well
Transfer them to a serving plate and serve hot with rice.
