Janmashtami special Taler Malpua / Palm Fruit Malpua
Today I will share step-by-step how to make Janmashtami special Taler Malpua / Palm Fruit Malpua. In Bengal, Taler Bora and Taler Malpua are leading Sweets to offer Sri Krishna to Please Him on the Auspicious Occasion of the Janmashtami Festival. Taler bora is a very common and traditional Bengali sweet Fritters made from fresh palm juice or pulp. But the extraction of the pulp from the ripe palm/tal is a little bit hard task and requires patience and time. But once it is extracted you can make any type of dessert or other recipes from this. Here I used a normal grater to extract the pulps. It has four steps; the first extraction of the pulps, the second step is to make sugar syrup, the third stage is to make a batter, and the last stage is to fry and dip the malpua into the sugar syrup.

- Mixing bowl

Ingredients for Taler Malpua / Palm Fruit Malpua
- Tal/Palm fruit pulp-1 cup
- All purpose flour-1 cup
- Suji-1/4th cup
- Rice flour-1/2 cup
- Milk-1/2 cup
- Sugar-1 and ½ cup( 1 cup for syrup and other ½ cups for the batter)
- Baking soda-1/4th tbsp
- Funnel seeds-1/4th tbsp (optional)
- Oil or ghee-1 cup
- Water-2 cups
How to make Janmashtami special Taler Malpua / Palm Fruit Malpua
Extraction of the pulps
Take a tal/palm and remove the upper portion and take out the skin. ( it must be fully ripe)
With the help of a grater, take out the pulps, from the three big seeds of the palm. You should have great patience to complete this stage. Now collect the pulps and keep them in a bowl.
To make a sugar syrup
Take a big vessel and put it in the flame, and pour 2 cups of water, 2 cardamoms, and 1 cup of sugar.
Allow them to boil for 10-12 minutes
Now the quantity of the water is reduced to one cup, and the syrup also becomes a little thick, switch off the flame.
To make a batter
Add 1 cup of maida/all-purpose flour to a mixing bowl
1/4th cup of suji
Add ½ cup of rice flour
Add ½ cup of sugar
Then pour ½ cup of milk
Now add the palm pulp.
Mix them and add 1/4th tbsp baking soda.
Mix them to make a little tight batter.
To fry and dip the malpua into the sugar syrup
Now heat oil in a frying pan
With the help of a big spoon take some portion of the batter and pour it into the hot oil. (First time you pour 1 or 2 to check the hotness of the oil. Next stage onwards you can make more at a time. Idea is to keep in high flame initially, then reduced to low-medium)
Fry both the sides well and then take out from the oil and put them into sugar syrup for 3-4 minutes, and then take them out from the syrup and keep them on a serving plate.
The same way makes the next stage by pouring more malpua at a time.
Allow them to cool and serve.
