How to Make chicken Parda /Potli biryani
Chicken parda/Potli biryani is a very popular biryani layered with aromatic basmati rice, gravy, fried onions and chicken, and other spices which are sealed inside the parda/ potli made with wheat flour and slow cooking in an oven or in a pan; this is How to Make Parda /Potli biryani.

Ingredients
- Chicken(600 gms)
- basmati rice-250 gm
- all-purpose flour-250 gm
- curd-50 gm
- ginger-garlic paste-1 tbsp
- Kashmiri red chili powder-1/2 tbsp
- turmeric powder-1/2 tbsp
- refined oil(for making berista and chicken)-4 tbsp
- ghee
- Roasted gram flour-2 tbsp
- Onions-3
- whole spices(green cardamom, cloves, nutmeg, cinnamon stick, bay leaves, and peppercorns) to make biryani masala
- 2 tbsp of milk
- few strands of saffron
- kewra essence/mitha atar-1 or 2 drops
- salt (as required)
How to Make Parda /Potli biryani
Make biryani masala
Heat Tawa or a griddle, and all(green cardamom, cloves, nutmeg, cinnamon stick, bay leaves, and peppercorns) the whole spices and heat them for 2-3 minutes in high flame and allow them to cool
And Put them in a blender
Grind them to make a coarse powder
To prepare the saffron milk
- Take 2 tbsp of milk to soak a few strands of saffron. And add mitha atar or kewra essence.
Wash the Basmati rice and let it soak for 2 hours
Make onion fry
Take three onions and slice them
Heat oil in a frypan, add the sliced onions and fry them till they turn in brown color, and keep aside.
Make dough for potli/parda
Take 2 cups of all-purpose flour and add ½ tbsp sugar and salt
Add activated yeast( prepared with warm water and a pinch of sugar by adding yeast) and water.
Make a big dough and cover it.
Now to marinate the chicken
Take a mixing bowl, add 2 tbsp roasted gram flour, card, and ginger garlic paste
Now add fried onions and turmeric powder. red chili powder salt and 1 tbsp oil
Then add biryani masala.
Mix well and add the chicken pieces and coat them well, cover and keep them for marinating at least 2 hours.
Now take a frying pan add 2 tbsp oil and heat it.
Drop the whole marinated chicken with the paste
Cover it for 10-12 minutes in simmering
To make the dough into flat
By this time take that dough and flatten it big size with the help of a rolling pin.
Make it 2 fold for convenience.
To cook rice
Take a big vessel to add, add sufficient water, then add 3 bay leaves, 5 cloves ½ stick cinnamon, 2 cardamoms, and 1 tbsp oil, add soaked rice when water starts boiling
Check the rice, if it boils 75%, then switch off the flame and strain it and keep it on a big plate
Now Chicken is prepared and we will go for make potli or parda
To make parda and layer.
Take a hard-bottomed pan, keep it over a griddle /Tawa, (don’t keep directly on heat), and grease it with the help of a brush
Now carefully place the big flatbread covering the pan and first put the fry onions, then place the layer of rice
Add the chicken chunks, biryani masala, fried onions, and saffron milk
Then again the layer of rice covering the chicken chunks
Now add the gravy, biryani masala, ghee, and fried onions
And now seal the parda, cover the lid, and put it on a low flame for ten minutes
After 10 minutes, turn it over, put it in the hot griddle/Tawa, and keep it for 10 minutes.
Now transfer it to a serving plate and serve hot.
