The ingredients required for this recipe are
Chaal Kumro/ash gourd/winter melon; these are coming, in different sizes and are oblong in shape, while buying choose the tender and soft one.
Moong/mug dal; Here I used a sona mug, you can use any mug dal
Panchphoron; this is the main ingredient for tempering
Cooking oil: Though it is recommended to use mustard oil, for better results, you can use any cooking oil
Other ingredients are turmeric powder, cumin-coriander powder, onion, ginger, red chili, green chili, sugar, and salt
How to make Chaal Kumro Diye Muger Dal /Ash Gourd Curry with Yellow Lentils
Take a blender jar, and add the coconut pieces, green chili, and ginger
Add little water, and make a fine paste
Heat a pan, and dry roast the mug dal until some of it becomes light brown in color
Then transfer it to a bowl and wash it with water, and allow it to soak for 30 minutes
Heat oil in a pan; add panchphoron and red chili for tempering
As they splutter and sizzle, add the fine-cut chaal Kumro, and mix them well
Now add turmeric powder, cumin-coriander powder, salt, and sugar, and sauté them for a minute
Add mug dal and sauté them for a minute
Now add the coconut paste and mix them well
Cover the lid and allow them to cook for 5-6 minutes on low flame
Open the lid and combine them, sprinkle some chopped coriander leaves
Transfer them to a serving bowl, and serve hot with rice, dal, and other curries
