Carrot Thoran Recipe/Carrot Stir Fry
Carrot Thoran Recipe/Carrot Stir Fry is one of the simplest side dishes we always have on our dining table. A Thoran is typically vegetable-based and made with freshly grated coconut tempered with curry leaves and mustard seeds. It can be prepared with vegetables like cabbage, snake gourd, bitter gourd drumstick, ridge gourd, and many more vegetables. You can prepare this recipe in various ways. You can grate, slice, or dice the veggies.

The ingredients required for this recipe are
- Carrot (grated)-2 cups
- Cumin seeds-1/2 tbsp
- Urad dal/ biuli dal-1 tbsp
- Whole red chili-3
- Curry leaves-2 sprigs
- Green chilies (silted)-2
- Grated coconut-1/2 cup
- Oil-2 tbsp
- Mustard seeds-1/2 tsp
- Salt, to taste
How to make Carrot Thoran Recipe/Carrot Stir Fry
Take a blender jar; add cumin seeds and whole red chili
Make a coarse paste and add grated coconut Again make a coarse paste
Grate the carrots, and keep them aside
Heat oil in a pan and add Urad dal, mustard seeds, and curry leaves for tempering
Once they started spluttering add the grated carrots and stir them for a minute
Add salt and mix them well
Cover the lid and allow them to cook for 3-4 minutes on low-medium flame
Open the lid add the grated coconut and stir them for a minute on high flame
Turn off the heat
Transfer them to a serving plate and serve hot with rice and sambar
