The Veg Paneer pulao recipe is a fragrant, delectable, and mildly spiced dish cooked with aromatic ground pulao masala, long grain rice, onions, herbs, and paneer (and sometimes added with other veggies like capsicum, beans, green peas, and carrot).
Pilaf or pilau /pulao is a rice dish, or in some regions, a wheat dish, whose recipe usually involves cooking in broth, adding herbs, spices, and other ingredients such as vegetables or meat(chicken, mutton, etc), and employing some unique technique to achieve cooked grains are not adhering to each other.

The Ingredients Required for Veg Paneer Pulao Recipe
For marinating paneer
- Paneer cubes-150 gm
- Ginger-garlic paste- 1 tbsp
- Gram flour-2 tbsp
- Turmeric powder-1/2 tbsp
- Garam masala-1/2 tbsp
- Kasuri methi-1 tbsp
- Cumin-coriander powder-1 tbsp
- Red chili powder-1/2 tbsp
- Ghee for frying the paneer-1 tbsp
For boiling the rice / making pulao
- Rice; Use long-grain basmati rice, for better result, as they are not as sticky as other rice
- Bay leaves-2
- Cardamom-2
- Black cardamom- 1
- Cinnamon- ½ inch stick
- Cloves-5
- Nut Meg (Jaiphal)-1/4th
- Mace (Javitri)-2 strings
- Ghee-3 tbsp
- Carrot (cut into small pieces)-1/2 cup
- Capsicum (cut into small pieces) – 1/2 cups
- Beans (cut into small pieces) -1/2 cups
- Coriander leaves1/2 cup
- Onions-1
- Salt
Preparation: how to make Veg Paneer Pulao Recipe
Take paneer cubes in a mixing bowl, and add all the spices for marinating, mix and rub the paneer cubes with the spices, and keep aside to rest for 15 minutes
Heat ghee in a pan and fry well the paneer cubes, and keep them aside
Add leftover ghee to the same pan, and add the whole spices (bay leaves, mace, nutmeg, cinnamon, green and black cardamom), and sauté them for 20 seconds
Add chopped onions, and fry them till translucent
Add carrots, capsicums, and beans and stir them for a minute
Now add the soaked basmati rice and mix them well
Add water and salt and mix them well (use the same quantity of water and rice)
Add chopped coriander leaves and cover the lid, and allow them to cook for 10-12 minutes on low flame (in between checks 2-3 times)
When the rice is almost cooked, then open the lid and add the fried paneer cubes, mix them well, and cover the top again for two minutes to set them
Open the cover, and serve hot with raita or pickle
