Tempting Aam Pora Dal / Roasted Mango Dal
Today I will share how to make Tempting Aam Pora Dal / Roasted Mango dal, which is different from popular Bengali aam dal. It is made with roasted mango, tur, and chana dal (pigeon peas and chickpea lentils), and other spices.

- Mixing bowl
- Pressure cooker
- Frying pan
- Spatula
Ingredients
- Raw mango-1
- Tur dal-1/2 cop
- Chana dal-1/2 cup
- Baking soda-1/2 tbsp
- Cardamom-1
- Star anise-1
- Cumin (whole)-1/2 tbsp
- Red chili-1
- Garlic (chopped)-2 tbsp
- Onion (Chopped)-1
- Cumin-coriander powder-1/2 tbsp
- Turmeric powder-1/2 tbsp
- Red chili powder-1/2 tbsp
- Kashmiri chili powder-1/2 tbsp
- Dry ginger powder-1/4 tbsp
- Chopped coriander leaves-2 tbsp
- Ghee-1 tbsp
- Bay leaves-2
- Cinnamon-1/2 inch stick
- salt
How to make Tempting Aam Pora Daal / Roasted Mango Dal
Take a roasting net, and roast a mango
Peel it nicely
Now take out the pulp from the mango and put them into the blender jar and make a smooth paste
Take a pressure cooker, then add half a cup of tur dal and chana dal
Add water, baking soda, and salt
Then add cinnamon. Cardamom and star anise cover it and go for 2 whistles to boil the dal nicely
Heat ghee in a pan
Then add red chili and cumin for tempering, add chopped garlic, and sauté them for a minute
Add chopped onion and stir them for 3-4 minutes, or till they become translucent
Now add all the powdered spices and stir them continuously till the raw smell goes off
Add roasted mango pulp (1/2 cup)
Stir them for a minute
Now add the boiled dal and mix them well, and cook for another 2 minutes
Add chopped coriander leaves
Transfer them to a serving bowl and serve hot with rice or roti.
