Kumro’r Torkari / Pumpkin Thoran /Kaddu Ki Sabji/ Narkel diye Kumro’r torkari is a very delicious recipe and is prepared in a healthy way with the use of minimal or without spices. In this recipe, the medium dice-shaped pumpkins are stir-fried with grated coconut, chopped onion, and curry leaves tempered with mustard seeds and green chili, making a flavourful recipe that is known as Thoran in Kerala, or Kumro’r Torkari in Bengal and Kaddu Ki Sabji in other states of India. ( while making thoran use coconut oil, for Kumro’r torkari or kaddu ki sabji use any cooking oil)

The ingredients required for this recipe are
- Pumpkin/kumro/kaddu (cut into medium dice shaped)-3 cups
- Shallots cut in roundels or medium dice cut onion-1 cup
- Green chili-5
- Curry leaves-2 sprigs
- Turmeric powder-½ tsp
- Grated coconut-1 cup
- Coconut oil ( for Thoran use coconut oil, for Kumro’r torkari or kaddu ki sabji use any cooking oil) -2 tbsp
- Mustard seeds-1/2 tsp
- Salt, to taste
How to make Kumro’r Torkari / Pumpkin Thoran /Kaddu Ki Sabji
Take a big mixing bowl and add medium dice-shaped pumpkin
Add shallots/onion slices, curry leaves, and 3 chopped green chilies
Now add the grated coconut, salt, and turmeric powder
Mix them well and keep them aside
Heat oil in a pan; add mustard seeds, green chili, and curry leaves for tempering
As they splutter and sizzle add the pumpkin-coconut mix and stir them for a few seconds
Cover the lid and allow them to cook for 3-4 minutes on medium flame without water
Open the lid and stir them for a minute on a high flame
Turn off the heat now and transfer them to a serving plate and serve hot with rice or roti.
