Vegetable pulao /Vegetable rice Pulao/veg pulav recipe
Today I will share a step-by-step How to Make Vegetable Pulao, which is very basic. If you can become a master to make this recipe you can prepare any type of rice pulao and Biriyani. In India, maximum people eat rice, in different ways. Pulao is a common recipe of rice that is made in almost all the states in India, but the spices and herbs are different, as per their choices. Pulao is nothing but aromatic long grain rice cooked with different vegetables and spices with ghee.

Handi/fry pan/wok
Spatula
Ingredients to make Vegetable Pulao
- Long grain Basmati rice-250 gm
- Ghee-2 tbsp
- Cashew nuts-15
- Onion-1(chopped)
- Potato-1 (Julian cut)
- Capsicum-1
- Carrot-1
- Beans-5
- Bayleaf-1
- Salt
- Whole spices (green cardamom-2, cloves-5, cinnamon stick-1 inch, bay leaves-2, and peppercorns-10)
How to Make Vegetable Pulao
Soak basmati rice in a bowl for an hour
Cut all the vegetables into small sizes.
Heat ghee in a pan
Add bay leaf and all the whole spices in it and stir them.
Add chopped onion and finely cut potatoes and stir them for a minute
Then add finely cut all other vegetables and sauté them for 2 minutes.
Add cashew nuts and stir them
Now add 2 cups of water (the quantity of water is exactly double the quantity of rice we have taken)
Add the soaked rice
and mix it slowly with the other ingredients.
Now cover the lid and allow them to cook for 10-12 minutes (as per the variation of rice, time varies)
Open the cover and check whether the rice is boiled properly and whether the water is dried totally or not. If the water is not completely dried then again cover the lid for 5-6 minutes.
Now everything is all right then turn off the flame and transfer them to a serving plate and serve hot with raita and paneer sabji or mutton kosha /chicken kosha.
