Ingredients
- Garlic-1 cup or approximate 50 cloves
- Mustard oil-1 cup
- Ginger-1/4th cup chopped
- Tamarind pulp -1/2 cup
- Turmeric powder-1 tsp
- Red chili flakes-2 tsp
- Asafetida-1/4th tsp
- Mustard-3 tsp
- Fenugreek seeds-1 tsp
- Fennel-2 tsp
- Salt to taste
how to make spicy garlic pickle
- In a small bowl add water and tamarind to soak it.
- Heat a pan, add mustard seeds, fenugreek, and fennel, roast for 2 minutes then allow it to cool at room temperature.
- In a blender jar add the roasted ingredients and make a course powder and keep aside.
- Take a hard bottomed pan, heat mustard oil, add garlic and chopped ginger.
- Sauté on medium flame till it turns slightly brown, do not over fry it.
- Now add salt, chili powder and turmeric powder.
- Saute for a minute in a low flame.
- Add the tamarind water.
- Cool the mixture.
- Now add roasted powdered masala to the garlic mixture.
- Allow the mixture to set, then put it in a air tight glass jar .
- Serve it immediate or you can preserve it in a refrigerator.
