Long yard beans stir fry with fresh coconut/Narkel borboti bhaja
Borboti/ Long yard beans are such a type of vegetable, you cannot be satisfied by adding another veggie. But the narkel borboti will make you satisfy as the texture and aroma of fresh coconut are mixed with fresh long yard beans. Stir-fried long yard beans are cooked with fresh coconut paste or grated coconut with green chili and ginger; This is How to Make Narkel Borboti. Ingredients
- Borboti/ Long Yard Beans- 500 gm
- Cumin seeds- ½ tbsp
- Oil-2 tbsp
- Turmeric powder- 1/2 tsp
- Fresh coconut paste- 1/2 cup
- Ginger-1 inch
- Green chili-3
- Salt
How to Make Narkel Borboti
Wash and cut the long yard beans in 1 inch lengthwise and keep aside.
Take a blender, and add small coconut pieces. Ginger and one green chili, and make a fine paste.
Now take a Kadai and heat oil
Throw ½ tbsp cumin seeds in hot oil for tempering
Now add the Borboti/long yard beans and stir it for two minutes, then cover the lid and allow it to cook for 5 minutes.
After 5 minutes open the lid, and add chopped green chili
After 2-3 minutes it will become a little soft, then add turmeric powder, salt, and red chili powder; and stir it continuously to mix well the spices with the long yard beans. it will take 2-3 minutes.
Then slowly add the fresh coconut ginger paste, mix it well and stir it for 2-3 minutes; as the coconut leaves the water, no need to add water to cook.
After 2-3 minutes if it becomes dry, then switch off the burner; transfer it to a serving plate
Serve hot with hot piping rice.
