How to Make Makki Ki Roti / Maize Flour Flatbread
Today I will share step by step on How to Make Makki Ki Roti / Maize Flour Flatbread which is a Punjabi recipe and the perfect lunch and dinner in the winter season. Sarson ka saag, which I already posted, is an ideal combination with makke ka roti.
Making Makki Ki Roti is not as easy as regular wheat flour roti, because it doesn’t have that much elasticity (gluten-free) to make it flatten, the sides will crack, so special care is needed while adding water (it must be hot water). It is served by topping a dollop of ghee with Sarson ka saag. If you are not fond of ghee, you can avoid it, especially for heart patients.
Equipment needs
- Mixing bowl
- Tawa/Griddle
- Rolling pin with a board
Ingredients
- Makke ki atta/ maize flour-1.5 cup
- Carom seeds/ajwain-1/2 tbsp
- Water as required
- Salt as required
- Ghee (optional)-2-3 tbsp or as required
How to Make Makki Ki Roti / Maize Flour Flatbread
In a mixing bowl, put 1.5 cups of maize flour,
Add a pinch of salt and carom seeds and mix them nicely.
Now add hot water and mix with the help of a spoon and allow the mixture to warm
Then with the help of your palm knead them tightly. (It may be noticed some cracks are there in the dough, which is normal, but if the cracks are more, then you need to add water and knead again)
Divide the dough into 4 equal portions and make them big lemon size balls
Now take the rolling board, sprinkle some maize flour over it, place the ball on the board and gently roll it with the help of a rolling pin and make a circle of approx 6-inch diameter, if some cracks are coming, ignore it.
Same way roll the other balls
Now heat a tawa or griddle, and gently place a maize roti on it (I am not using ghee)
Press the sides, so it can start puffing
Now turn it over to the other side and same way roast both the sides
Take it out from the tawa and make others in the same way
Now transfer them to a serving plate and serve immediately with Sarson ka saag.
