How To Make Lau-er Khosa Bhaja ?Lau- er Khosha Bhaja literary means to Bottle Gourd Peel Stir Fry. I remember in my childhood I used to eat this humble side dish with moosurir dal and lau ghonto which my mother used to prepare in a mud house in a remote village. surely it goes well with hot piping rice and lentil soup. Like Bottle-gourd, bottle-gourd Peels are also very rich in fiber, vitamins, and minerals. Next time onwards you keep this peel while making any other recipe of bottle gourd to make Lauer Khosha Bhaja and lauer khosa bata as a side dish. You can fry it with potato and onion or you and fry it alone
Here I am using Julian cut potato, onion, and two green garlic and chili
Main Equipment required
- Gas stove
- A frying pan or wok
- Spatula
- A serving plate/bowl
Ingredients
- 2 cups Bottle gourd (lau), Julian cut
- 1 Potato, Julian cut
- I onion, sliced
- 2 tbsp Mustard oil
- Turmeric powder, 1 tbsp
- 1 tbsp panchphoron for tempering
- 4 Green Chilies, slits
- Salt, to taste

- To begin the Lau Er Khosha Bhaja recipe, first peel the bottle gourd and cut it Julian cut.
- Same way peel the potato and cut it.
- Take an onion and two green garlic and slice it
- Heat mustard oil in a frying pan over medium heat. put the panch phoron for tempering.
- As they splutter and sizzle add, potato, onions, green galic and lau- er khosa , sprinkle salt and turmeric powder and stir. Cover the pan and cook in low- medium heat until cooked.
- Uncover the lid and check the taste of salt and , if cooked properly, turn off the oven and take it out and transfer it to a serving plate.
Notes: To make the best lau-er khosa bhaja, you have to choose lau(bottle gourd) always a smaller one, otherwise it will be a little bit tougher, in that case before stir fry you have to boil once the peel of the bottle gourd.
