In Bengal fish paturi(different types of fish) is a famous recipe. Likewise, I made it with elephant foot yam and chicken mix or ol chicken paturi. Here I used mustard paste and lemon juice as the main ingredients, which goes well with ol or elephant foot yam, that’s the reason I used yam with chicken. Ingredients
- Chicken -4 medium size/150 gm
- Elephant foot yam-100 gm(cut into small slice)
- Garlic-7-8 cloves
- Ginger-1/2 inch
- Onion-01(medium size)
- Green chili—01
- Red chili-01
- Mustard oil-1 tsp
- Turmeric and cumin powder-1/2 tsp each
- Curry and mint leaves
- Salt to taste
- Lemon juice-1 tsp

How to make delicious ol chicken paturi
Cut the ol/yam into small pieces
Cut onion into slices, then take a pan, heat oil and fry the onion till it becomes light brown in color and allow it to cool in room temperature.
Now in a blender jar take fried onion, ginger, garlic, red and green chili and grind it, then add mustard seeds again grind it to a smooth paste.
Take a big bowl, add chicken pieces, yam, turmeric and cumin powder, ginger-garlic-mustard paste, salt and lemon juice with curry and mint leaves, mix it nicely and keep it aside for marinating for 1 hour.
Meanwhile, we prepare the banana leaves.
Take a fresh banana leaf, wash it, then take it over the oven to give slight heat to make it soft and tender, to avoid tears.
Then place the mixture in the center of the leaf and give a fold four times. Likewise make the same for others.
Take a pressure cooker without whistle and pre heat, now place the paturi inside the cooker and close the lid.
Let it cook for 40-45 minutes in low heat.
Switch off the oven, uncover the lid and take out the paturi and place it over the serving bowl.
