It is a very popular and famous recipe in West Bengal and also other parts of India in different names.
The eggs are boiled, fried, and then simmered in a thick gravy made with tomatoes, onions, garlic, and ginger.
Sometimes added with potatoes finished in a warm, spicy, cumin, coriander flavored sauce and this is how to make delicious dimer Kalia/egg curry.

Ingredients to Prepare Egg Curry
- Eggs-04
- Onion -02
- Tomato-01
- Garlic-6 cloves
- Ginger -1 inch
- Cumin seeds- 01 teaspoon
- Garam masala-1/4 teaspoon
- Turmeric, coriander, red chili, and cumin powder -1 teaspoon
- Salt as per taste
- Water-1/2 cup
How to Prepare Delicious Egg Curry?
Step 1:
Boil the eggs and onions for 10 minutes. Take them out, take the shells of eggs out, rub with a pinch of salt and turmeric powder over them, and keep them aside.
Step 2:
Take a jar of a blender, add tomato, boiled onions, garlic, and ginger; make a smooth paste.
Now take a hard-bottomed pan, heat oil, and fry the eggs for 3-4 minutes or till the changes to a light golden brown.
In the same pan throw some cumin seeds for tempering.
As they splutter and sizzle add the onion, tomato paste and cook for 2-3 minutes and add turmeric, coriander, cumin and red chili powder and cook for 5-6 minutes or till the gravy becomes dry and the raw smell of the spices goes off.
Add little water and allow it to cook for 2 minutes.
Then add the eggs and mix it nicely with the gravy and cook for another 2 minutes.
Turn off the flame and enjoy with fried rice or roti/Indian flatbread.
