The main ingredient of the recipe is chana/cottage cheese, not paneer.First make chana from milk, then makes lemon size balls and fries it and mixes with the gravy of potato and ginger; this is how to make delicious chanar dalna/Bengali cottage cheese curry. This is authentic and traditional pure vegetarian recipe means without onion and garlic. Dalna means there will a main ingredient which is to be fried and then mix it with thick gravy, like dhokar dalna, fhulcopir dalna.

Ingredients
For preparing chana
- Milk 500 ml
- Lemon juice from one lemon
To make chanar kofta/chanar bora
- Chana from 500 ml milk
- 1/2 tsp ginger paste
- cumin powder 1/2 tsp
- 1/2 tsp turmeric powder
- 1 tbsp maida or All purpose flour
- ½ cup oil for frying
- 1 tbsp ghee
- 1/4 tsp salt
For making chanar dalna tarkari
- 07 chanar kofta
- 2 potatoes(cubic cut)
- 1/2 medium tomato
- 1/2 tsp ginger paste
- cumin powder coriander powder and chilli powder and turmeric powder 1/2 tsp each
- 1/2 tsp sugar
- 1/2 tsp garam masala powder
- 1 tsp ghee
- 1/2 tsp cumin seeds for tempering
- 1/2 tsp salt
- 1 1/2 tbsp oil
how to make delicious chanar dalna
First take a pan and boil the milk, while boiling slowly add the lemon juice and make chana.
Then with the help of a strainer stain the chana,then keep the chana in a clean cloth and squeeze it or keep a heavy item over it to allow the excess water out.
Now add all the spices, ghee maida and ginger paste with chana and knead it well to mix ghee and flour properly with the dough.
Now make chana balls, it will come around 7-8.
Fry the koftas in medium flame and keep aside.
Same way fry the potatoes and keep aside.
In a pan heat oil, add cumin for tempering.
As they splutter and sizzle add the potatoes and fry it for 2 minutes.
Add ginger, tomato and except garam masala all the spices and cook it for 2-3 minutes then add potatoes and water to boil ,add salt and sugar and allow it to cook for 5 minutes.
Add koftas and cook for 2 minutes.
Take it out from the flame, add ghee and garam masala.
You can serve it hot with rice and dal.
