how to make delicious Bengali shukto
This is a healthy, less spicy,traditional, mixed seasonal vegetable recipe with bitter gourd and Bori / Vadi /lentil dumplings. Bitter gourd and bori are fried and then simmered in a medium thick gravy made with all seasonal vegetables i.e. brinjal, drum stick, raw banana, potatoes and ginger and finished in a warm, cumin, fenugreek flavored sauce ;this is how to make delicious Bengali shukto/traditional Bengali mix veg curry.

Ingredients
- Potatoes cut in 1 inch pcs -2
- Bitter Gourd or karela sliced cut in 1 inch lengthwise size
- Raw banana/ kanchkola cut in 1 inch lengthwise-1
- Brinjal cut in 1 inch pcs -1 medium size
- Raw papaya-1/2(cut in 1 inch lengthwise)
- drumsticks cut in 1 inch size -2
- Bori / lentil dumplings -15-20
- Ginger Paste -1tsp
- Bay Leaf -2
- Whole Dry Red Chili -1
- roasted coriander powder-1/2 tsp
- panch phoron-1/2 t spoon (It comprises mouri (fennel seeds), methi (fenugreek seeds), kaalo jeere (black cumin seeds), zeera(cumin seeds), and a typically Bengali spice, called radhuni)
- Shukto masala -1tsp(roasted panch phoron and mustard powder)
- Ghee -1tsp
- Mustard oil -2tsp
- sugar -1tsp
- salt (to taste)
how to make delicious Bengali shukto
- Fry bitter gourd and bori separately and keep aside.
- Heat oil and add panch phoron , whole dry red chilies and the bay leaves for tempering.
- As they splutter and sizzle add all the vegetables and sauté for two minutes. Then add ginger paste, shukto masala & salt cover and shallow fry the vegetables for 3 mins. Add a cup of water and cover the lid and allow it to cook for another 10 minutes over low-medium heat.
- Open the lid and add fried bitter gourd and bori and cook for 2 minutes.
- Now turn off the burner, sprinkle ghee and roasted coriander powder.
- Serve hot with steam rice.
