Ingredients of uchhe chhorchori recipe
- Drumstick-06 bigger and thicker size(cut into 1.5 inch )
- Potatoes –two big (sliced)
- Bitter gourd-4 medium size (sliced)
- Oil -02 tspoon
- panch phoron-1/2 t spoon (It comprises mouri (fennel seeds), methi (fenugreek seeds), kaalo jeere (black cumin seeds), zeera(cumin seeds), and a typically Bengali spice, called radhuni)
- Mustard -03 tspoon
- Turmeric powder ½ tspoon
- Poppy seeds –o2 tspoon
- Green chili-01
- Red chili-01
- Ginger -01 tspoon paste
- Salt to taste
How to make bitter gourd/ uchhe chhorchori recipe
- In a pan, heat oil, temper with panchphoron and red chili.
- Then add the vegetables which had been cut already in a slice and cook for 5 minutes then add salt & water and cover the lid to boil the vegetables for about five minutes.
- By the time take a blender put poppy seeds ginger, mustard seeds and turmeric powder, make a smooth paste.
- Now uncover the lid and add the mustard and poppy seeds paste and cook for another two to three minutes ensuring that all vegetables are boiled properly.
- Take out from the burner and serve with steam rice with other curries and dals.
