How to Make Aam Shrikhand/Creamy Mango Yogurt dessert/ Amrakhand
Greek yogurt or hung curd is whisked with mango puree and added with saffron, cardamom, and chopped nuts, which makes a creamy texture; this is How to Make Aam Shrikhand. You can replace mango with strawberry to make strawberry shrikhand or you can make Kesar Pista shrikhand without using mango pulp. It goes well with hot puri/luchi or paratha. Mango Shrikhand is also known as Amrakhand in India.

Ingredients to Make Aam Shrikhand
- Plain yogurt 600 gm
- Sugar powder-1/2 cup
- Mango-500 gm( pulp-300 gm without seed)
- Milk-2 tbsp
- Saffron strands-8-10
- Chopped nuts-2 tbsp
- Cardamoms-2
How to Make Aam Shrikhand
Take fresh yogurt ( here I have taken homemade)
Put it in muslin clothe
Then take a big bowl
And keep a strainer over it, keep the yogurt with a muslin cloth on the strainer, and keep a heavy item over it, so that the liquid will drip from the yogurt making it thick and creamy. Keep it in the refrigerator for 12-14 hours.
After 12 hours, check the liquid we got from the yogurt
And check how the yogurt becomes thick, and transfer it into a mixing bowl.
Cut two mangoes, and take out pulps
Put them in a blender jar and make a fine puree
Now whisk the yogurt and make a fine, creamy-like texture
Add sugar powder
Then add the mango puree
Now add the saffron milk (take 2 tbsp warm milk and put some strands of saffron in it )
Add crushed/ powder cardamom
Now whisk them well, so that it becomes a smooth creamy texture.
Add the chopped/powdered nuts.
Now transfer them to some earthen pots or bowls, which makes them thicker by absorbing the liquid.
Put them in the refrigerator for at least one hour, then serve.
