The following nutrients are found in whole grains, according to the American Heart Association:
- B vitamins are involved in many biological functions;
- Folate or folic acid is known as vitamin B9 helps the body form new cells and can prevent certain birth defects;
- Iron helps create hemoglobin which uses to carry oxygen in the blood;
- Magnesium is a mineral that helps more than 300 biological functions;
- Selenium helps the immune system and regulates the thyroid gland.

Broccoli gives our body beta-carotene and vitamin –c (equivalent to an orange), vitamins B1, B2, B3, B6, iron, magnesium, potassium, and zinc too. It helps lower cholesterol levels and prevents cancer and eye health.
Beetroot provides fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C, improved blood flow, and lower blood pressure.
Spring onions are an excellent source of vitamin C and calcium, dietary fiber and vitamins A and B6, copper, thiamine, folate and potassium, chromium, manganese, and iron may lower cholesterol levels, decrease the risk of heart attacks and strokes.
Carrots are a good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants which is a weight-loss-friendly food and helps to lower cholesterol and improve eye health.
It’s very simple food, you need to do nothing except cut the vegetables.
Ingredients:
- Brown rice: 1 cup
- Oil: 1 teaspoon
- Broccoli: 5 to 6 florets
- Spring onion: 2 to 3 pieces
- Carrot: 1 medium
- Beetroot: 1 small
- Broad beans: 3 to 4 pieces
- Green peas: 1/2 cup
- Lemon: 1
- Coriander leaves a small amount
- Salt to taste
How to Make Vegetable Brown Rice?
- Rinse 1 cup of brown rice and soak the rice grains in enough water for 5 to 6 hours. Later drain and keep aside.
- Take a pan, put water to boil and add the brown rice and allow it to boil.
- After boiling put off the burner, cover the lid, and let extra water soak
- Wash and cut all the vegetables into a small cube.
- Take a hard bottom pan or Kadai and put it in the oven.
- Add 1 spoon of oil and slowly add all the vegetables, add salt and cover the lid.
- After 4-5 mins slowly add the brown rice, add lemon juice and mix it nicely.
- Garnish with coriander leaves and serve hot with salad or raita
