Crispy and Sweet Khaja Recipe are not only a simple sweet, it is a part of Chappan bhog in the Lord Jagannath temple. Chappan bhog means 56 types of bhog to offer in Lord Jagannath temple during worship, which are prepared in an earthen pot, keeping one after another.
What is Khaja
Khaja is a layered fritters sweet made with all-purpose flour, layered and fried in ghee or oil and dunked in thick sugar syrup, which makes crispy and sweet khaja.
Equipment required
- Pan for sugar syrup
- Frying pan
- Skimmer
- Spatula
Ingredients
- All-purpose flour-2 cups
- Sugar-1 cup
- Cardamoms-2
- Melted ghee/oil-2 tbsp
- Pinch of salt
- White oil-2 cups
How to Make Crispy and Sweet Khaja Recipe
In a pan/ Kadai add 2 cups of sugar and 1.5 cups of water and heat it
Add 2 crushed cardamoms and let the syrup boil, it takes 8-10 minutes
Now check the consistency of the syrup, it should single thread consistency. Take out the syrup from the oven and keep it aside.
In a mixing bowl add 2 cups of all-purpose flour and a pinch of salt.
Add 2 tbsp oil and mix well.
Before adding water check the mixer, if it holds the shape after pressing it then it is ok.
Add water in 2-3 stages and make dough.
Divide the dough into 5 equal parts and make lemon size 5 balls.
Flat all the 5 balls to make a circle of 6-inch diameter like roti.
Now apply oil and then flour in one roti and put another one over it, like this put all the 5 rotis one over another.
After putting all the 5 rotis together, roll this nicely.
Cut them into six equal parts.
Now flat slightly all the 6 parts one by one.
Heat 2 cups of oil in a pan
Slowly drop all the 6 khaja one by one.
Fry them nicely on all the sides
Then take them out with the help of a skimmer
Put them in the sugar syrup, and keep them for 5-6 minutes
Take them out from the syrup, allow them to cool to room temperature, and transfer them to a serving bowl and serve.
