The ingredients required for this recipe are
- Ash gourd/ chal kumro(Cut into small pieces)-3 cups
- Shallots cut in roundels or medium dice cut onion-½ cup
- Cumin seeds-1/2 tbsp
- Green chili-5
- Curry leaves-2 sprigs
- Turmeric powder-½ tsp
- Fresh coconut slices-¼th
- Coconut oil-2 tbsp
- Mustard seeds-1/2 tsp
- Salt, to taste
How to make Ash Gourd Thoran / Chal Kumro Thoran
Take a blender jar, and add the coconut slices, green chilies, and cumin seeds, Make a coarse paste, and keep them aside
Now take a big mixing bowl; add ash gourd, Then add the coarse paste of coconut paste
Also, add the medium dice cut onions
Now add salt, curry leaves, and turmeric powder
Mix them nicely and keep them aside
Heat oil in a pan and add the mustard seeds and green chili for tempering
Once they started spluttering add the ash gourd mix, and saute them for a minute
Now cover the lid and allow them to cook for4-5 minutes on a low flame
Open the cover and stir them for 2 minutes on a high flame
Turn off the flame and transfer them to a serving plate and serve hot with rice and sambar.
